According to Alain Fontaine, also at the head of the Parisian restaurant Le Mesturet, it is necessary to play on all the levers: wages and working conditions, by working in particular on the cuts between the services. Unions also want to guarantee employees a weekend off every month: “This is a good solution, and there are others“, says the professional.
The president of the AFMR also highlights immigration, while the UMIH, an employers’ organization, recently announced an agreement with Tunisia to facilitate the arrival of Tunisian workers in French establishments. “We must first take care of immigration here“, argues Alain Fontaine: “We have great young people coming out of CFA and high school but also great people on the sidewalk waiting to work. Administratively, we have to be able to take them from us. The restoration of tomorrow will be saved in part by the immigration present on our territory“.
